Cobb Hill Cheese

Hartland

Cobb Hill Cheese has been handcrafting artisan cheeses in Hartland, Vermont since 2000. They age all their cheeses in a cave, developing natural rinds through brining and aging for 2-12 months. Their award-winning Ascutney Mountain Cheese was the first type made, followed by Caerphilly, a Welsh style cheddar, and farmhouse style Gouda. They also offer Havarti in plain or dill, Brownsville Trail with caraway, and Oh My Gouda as a baby wheel. The cheese is made from fresh milk provided by Cedar Mountain Farm's jersey cows, imparting a nutty flavor. The cheesemaking process involves heating milk, adding lactic bacteria and vegetable rennet, hand stirring the curd, hooping, and pressing. Cobb Hill is an intentional cohousing community focused on sustainability, supporting agriculture like cheese, maple syrup, and shiitake mushrooms.
